This is a great meal to make ahead and freeze for a quick, high-protein lunch or dinner when you’re too busy to cook. This recipe calls for two cans of beans, I used Kidney and Pinto but you can use any beans you like
Ingredients:
1 1/2 Pounds Lean Ground Turkey 1 Medium Onion Chopped 1 Medium Green Bell Pepper Chopped 1 tsp Olive Oil 3 Cloves Garlic, chopped 1 Tbsp Chili Powder 1 1/2 tsp Ground Cumin 1/2 tsp Sea Salt 1/2 tsp Cayenne Pepper (adjust to your liking) 1 Can Diced Tomatoes (15oz) 1 Can Black Beans (15oz) 1 Can Pinto Beans (15oz)
Instructions: Heat oil in pan, add Turkey, Onion, Green Pepper & Garlic - until turkey no longer pink, approx 5-8 min. Add cumin, chili powder, salt, cayenne pepper; cook stirring occasionally for 1 min. Add Beans(drained) & tomatoes (with liquid) - bring to a boil. Reduce heat to low, cook for 20 - 25 min stirring occasionally until thickened.
CROCK POT - Brown Group Turkey in Pan and with Onions , Pepper and Spices - through all in crock pot with the rest of the ingredients - cook on low 6 hrs or so. Makes 6 Servings - 1 cup each 21 Day Fix Containers: 1/2 Green / 1 Red / 1/2 Yellow
