One of my FAVORITE dishes - such a quick easy and healthy recipes! This healthy chicken marsala was an absolute hit with everyone in family!
What you need:
1 T coconut oil
16 oz Baby Bella mushrooms, sliced
1/4 cup shallots, finely diced
1 T minced garlic
1 1/2 cup Marsala Wine
1 lb chicken breast pounded thin
1/4 cup wheat flour
1 tsp onion powder
1 tsp garlic powder
1 tsp oregano
4 T almond milk
Salt & Pepper to taste
1 cup chicken broth
Fresh Parsley, for garnish
Sea Salt and Pepper, to taste
What you do:
In 12" skillet, heat coconut oil add mushrooms and saute for 8-10 minutes, add garlic, shallots & wine - let simmer gently until wine reduces (about 10 minutes), stirring occasionally.
While mushroom cook, combine flour & seasoning in a ziplock bag - pound chicken to thin breast & season with salt & pepper - then add chicken to bag, coat the chicken well, shake to remove excess.
In a separate skillet, heat 1 T coconut oil and cook chicken until browned (a few minutes on each side)
When chicken is cooked through, add mushrooms/sauce, almond milk and 1/2 cup chicken broth and let simmer.
Serve with fresh parsley

Some people will ask about the flour but it's so little it is around 1/8 of yellow and I don't count it .
