I adapted slightly for our taste - either way you go you will be happy! Simple, easy and family friendly - that's a recipe of success for this busy family - by far one of the best whole chicken crockpot recipes! The original recipe is from my friend Kim and you can find her amazing blog and recipes here.
2 tsp. minced garlic juice of two lemons 3 Tbsp. unsalted butter 1/4 C. extra virgin olive oil
2 tsp. dried parsley
Sea salt and pepper to taste
2 Tbsp. dried oregano
2 tsp onion powder
Combine the garlic, lemon juice, butter, olive oil and brush chicken with it. Sprinkle with seasoning, rub into entire chicken. Cook on low for 6-8 hours.
Optional: Cut up onion wedges and add diced potatoes under the chicken. Add one 15-ounce can low sodium chicken broth. They will absorb the juices.
