When this video rolled across my Facebook news feed to say I was excited was an understatement, you can see original recipe here, I love cauliflower and avocado and this combo is so good!
What you need:
2 Cups Cauliflower
1 eggs
kosher salt
2 tsp extra-virgin olive oil
1/2 avocado
What you do:
Grate cauliflower on a box grater or portion out 2 cups if you can get your hands on the already RICED cauliflower bags! Transfer to a large bowl and mix with 1 egg and a large pinch of salt.
Heat skilled with 2 tsp olive oil and add 2 big scoops of cauliflower mixture to pan and shape into a round patty. Repeat to make a second patty. Let cook until golden brown, about 5 minutes, then carefully flip. Cook 3 more minutes. Transfer to a plate. Top with Avocado and serve as a side for dinner or top with eggs and enjoy for breakfast!
