Tasty twist on a classic American casserole dish.
What you need:
3 large sweet potatoes peeled & diced
2 lb ground turkey
2 T ghee (or coconut oil)
1/2 c onion chopped
1 c broccoli, cut into small florets
½ c carrots, diced
1 tsp garlic powder
3.5 tbsp tomato paste
¼ c cream of full fat canned coconut milk
2 tbsp coconut aminos (soy sauce for non paleo)
2 tsp rosemary,
1 tsp thyme
1 tsp garlic powder
Salt & Pepper (to taste)
WHAT YOU DO:
Preheat oven to 350 -
Grease 13x9 Baking dish with Ghee...
Steam sweet potato while you prepare the following:
Saute onions in large pan with 1 T Ghee (or coconut oil) till translucent, add turkey, season with salt & pepper and cook turkey until brown (app 5-7 min)
Remove Turkey & set aside in a large bowl
Return pan to stove top - add 1T Ghee and Saute broccoli & carrots till they are soft (app 4-6 min) Combine cooked veggies with ground turkey - season with Rosemary, Thyme, Coconut Aminos & tomato paste
Transfer to baking dish
In a separate bowl mash cooked sweet potatoes with coconut milk, add salt & pepper to taste then spread on top of baking dish Cook 15-20 Min
