One of the things I missed when following Whole30 was Quinoa, it one of those pseudo-cereals. While it might not technically be considered a grain, it contains properties that could be similarly problematic to your body, which makes it off-limits when following Whole30. I know grains are not problematic for me so I was super excited to give this recipe a go. I found the original recipe thanks to Pressure Cooking Today, which has a ton of great recipes, if you get a chance you should check it out! For this one I added almonds, coconut milk, raspberries and coconut flakes! It was perfect! My youngest enjoyed a bowl with chocolate chips & coconut milk. There are so many ways you can tweak and enjoy!
What you need:
1 1/2 cups uncooked quinoa, well rinsed
2 1/4 cups water
2 tablespoons maple syrup
1/2 teaspoon vanilla
1/4 teaspoon ground cinnamon
pinch of salt
Optional Toppings: milk, fresh berries, sliced almonds
What you do:
Add quinoa, water, maple syrup, vanilla, cinnamon and salt to the Instant pot.
Select high pressure and 1 minute cook time. When the pot beeps turn the pot off, wait 10 minutes, and then use a Quick Pressure Release to release any remaining pressure.
When valve drops remove lid carefully
Fluff the quinoa and serve hot with coconut milk, berries and sliced almonds
