Thanks to my momma for this recipe!! My family just polished off a pound of pasta 🐷🐷🐷 - It's quick, it's easy, it's made in one pan and as a busy mom that makes this recipe even better!!!
What you need:
1 shallot or 1/2 onion 2 tsp minced garlic 1 Cup peppers (yellow , green, red ) diced 1 lb Lean ground beef 2 Can 14.5 oz diced tomatoes 1 Can kidney beans Salt, pepper, Italian seasoning & onion powder to taste 1 pound whole grain penne pasta
What you do:
Sauté shallot & peppers (I used pre-diced Red, yellow, green mix , sold at Publix ) .... add 2 tsp garlic and cook till peppers & onion are soft .... add 1 lb lean ground beef, cook through .... drain if needed, return to pan and add 2 cans of diced tomato with juices and 1 can kidney beans (rinsed) .... season with a generous amount of salt, pepper, onion powder, Italian season and let simmer at least 30 Min .... Serve over cooked pasta with a sprinkle of Parmesan cheese!!!
