Shrimp Scampi Zoodles

Quick and easy shrimp scampi that my entire family LOVES - some of them prefer it over pasta but for me Zoodles are a perfect low carb alternative.

What you need:

  • 2 tablespoons coconut oil

  • 1 lb of shrimp

  • salt and pepper to taste

  • 1 tablespoon of garlic salt

  • Zest of 1 Lemon

  • 1 lemon, freshly squeezed

  • 2 tablespoons of fresh parsley

  • freshly grated parmesan cheese

  • Zucchini Noodles (3 Large Zucchinis spiraled)

What you do:​

  1. Melt coconut oil in a large skillet over medium high heat.

  2. Add shrimp, salt and pepper, garlic salt. Cook, stirring occasionally until the shrimp turns pink. About 2-4 minutes.

  3. Stir in lemon zest & lemon juice .... Bring to a simmer.

  4. Stir in fresh parsley and Parmesan cheese.

  5. Toss with Zoodles and garnish with more Parmesan and parsley. Serve immediately.
