Parmesan Zucchini & Spaghetti Squash with Pine Nuts (21 Day Fix Breakdown)

21 Day Fix friendly gluten free...this recipe meets a bunch of dietary needs and it can be easily adjusted to those it doesn’t. It’s super healthy and delicious. Packed withzucchini, squash, garlic and parmesan, tossed with olive oil, this meal makes a great side dish or light lunch.

Ingredients

  • Medium Sized Spaghetti Squash

  • 1 tablespoons olive oil

  • 1 large zucchini, sliced

  • 3 garlic cloves, minced

  • 1 Blue Container freshly shredded Parmesan cheese

  • 1 Blue Container pine nuts, toasted

  • Salt and pepper to taste

To cook spaghetti squash:

  • Preheat oven to 425'

  • Cut the squash in halve, scrape out the seeds, spray cooking oil over the cut sides of the squash. Spray the baking sheet with oil too and place the squash on the baking sheet cut side down.

  • Bake for about 30-40 min this will depend on the size of the squash, so watch it after 30 min. Remove it from the oven, flip it cut side up so it cools faster. After squash cools, scrape squash with a fork to remove flesh in long strands and transfer to a bowl.

To cook zucchini:​

  • Heat olive oil in a large skillet on medium-high heat. Add sliced zucchini and minced garlic and sauté for about 2 minutes, stirring, on medium heat, uncovered. Season with salt, stir, and continue cooking for another 3-4 minutes, covered, occasionally stirring, until zucchini softens and browns a bit. It get covered to preserve the juices.

  • Add spaghetti squash to the skillet with zucchini and mix to combine, on low heat.

  • Add freshly shredded Parmesan cheese into the skillet and stir on low heat to melt the cheese. Add salt and pepper, to taste. Top with toasted pine nuts.

*I toasted my pine nuts in the toaster oven - watch them, because they can over toast quickly!

So once cooked, this was two servings for me - My squash was on the smaller side - and when I chopped the zucchini up it was about 2 GREEN containers - so for me I portioned it and counted it accordingly - because the Squash and Zucchini size can very, your may get more or less portions.
